I have a MAJOR sweet tooth. It is my number one weakness. If you want to get on my good side, surprising me with a cupcake, or cookies, maybe some ice cream will do just the trick. But…that doesn’t really help when I’m trying to get fit and lean for the summer so I had to come up with a way to cheat healthy.
I took my search to Instagram and Pinterest where I found different recipes for healthy cheat treats. After testing and trying, and tweaking recipes, I’m happy to share my final chocolate chip cookie recipe with you guys! This recipe calls for whole wheat flour and coconut sugar instead of regular processed and refined white flour and white sugar. It also subs out milk chocolate chips for dark chocolate which has antioxidant properties as well as fiber and other nutrients.
- 1/2 cup coconut oil (melted)
- 3/4 cup coconut sugar
- 1/2 banana (mashed)
- 1 1/2 cup whole wheat flour
- 1 egg
- 1 tsp vanilla
- 2 tsp baking powder
- 1/2 cup dark chocolate chips
Start by melting 1/2 a cup of coconut oil. You can melt it by microwaving it for about 15 – 20 seconds. Place oil in a large bowl and mix it with the coconut sugar. Add 1/2 a ripe banana into the mixture and mash it up until it is combined with the coconut oil and sugar. Add in the rest of the ingredients (except the chocolate chips) and stir to combine until the dough is formed. Fold in chocolate chips. Lastly, roll the mixture into balls and place on a baking sheet lined with foil. Bake each batch of cookies at 350 degrees for 13 – 15 minutes.
This recipe made about 15 cookies depending on the size, which I devoured almost immediately after baking!
