Oatmeal is a staple for me. Its great to eat in the morning before a workout, as the carbs help to give you energy to power through the exercises. Its very filling, so a little goes a long way, and there are a zillion ways to top and flavor plain oats. For this recipe we are going to top our oats with a mixture of berries for an antioxidant boost. We are also going to sneak in some chia seeds for added protein and omega 3 fatty acids.
- 1/2 cup Old Fashioned Oats
- 1 tsp ground cinnamon
- 1 tbsp raw chia seeds
- 1 tsp honey (I used raw wildflower honey)
- 1 cup water
- 1 handful of dried cranberries
- 1 handful of blueberries
- 2 -3 strawberries, cubed
Combine the oats, chia seeds, cinnamon, and water into a microwave safe bowl. Stir ingredients together then add in the honey. Microwave for 2 minutes and 30 seconds. While the oatmeal is in the microwave, wash the fruit and cut the strawberries into cubes. Stir the oatmeal, then layer on the cranberries, blueberries, and strawberries. Now you have a quick, delicious breakfast ready in minutes!
Oatmeal Tip: To keep the meal healthy I used a natural sweetener, the honey, but if that’s not your speed, feel free to replace the honey with sugar or sweetener of your choice. Coconut sugar is a better alternative to refined sugar. I’ve also used dark brown sugar in place of the honey. It still tastes great!
